Wet Processed coffee is also known as washed coffee. They require very specific equipment and a ton of water. Coffee cherries are pulped by machine, soaked in water before being dried and hulled. Washed coffees depend almost 100% on the bean having absorbed enough natural sugars and nutrients during its growing cycle. This means the varietal, soil, weather, ripeness, fermentation, washing, and drying are absolutely key. Washed coffees reflect both the science of growing the perfect coffee bean and the fact that farmers are an integral part of crafting the taste of a coffee bean. This involves a week of fermentation in enzymatic water which breaks down the sticky cherry pulp enclosing the beans. Because of the breakdown chemical compounds, the flavour of the coffee is enhanced, resulting in a brighter and clearer cup with finer citrus and floral notes.
